I think strings might take some shenanigans to work and wouldn't be as common. Like, I can see them having harps, but I don't see those harps very mobile.

i imagine instruments using a pedal could work- like with a drumset, but a pedal for every drum. a system like that could work with strings like a piano, bells, something xylophone-esque, etc. I could see something like a lithophone or glass armonica working too, something you could get sound out of without necessarily needing things like dextrous digits. or thumbs. heck, maybe even a theremin depending on how technologically advanced you wanna get with it.

wind instruments could probably be done, but they'd probably need to be mounted to something, with a way to change the airflow that's big enough to work with paws- so either a very big instrument, or a pedal system that's fiddly enough to most likely need an animal with fingers to help setting it up.

(tangential aside, but considering howling, i like to think droning, harmonic sounds would be a big part of wolf music. i just know the wolf ambience would be killer.)

Well, they can hold a pickaxe and fish so I imagine they could play anything if they have the means to craft it, which again they can smelt down bars and craft armour so... I don't think they would find it difficult. They know how to break down leather so they could make simple string instruments and drums I imagine.
