Hello! I just got a WW where both his eyes and under are the color Sunrise, so I'd like to know, does that count as him being a double? Or... do the eyes not count?

Yeah I've been wondering this too, as someone who has a WW who would be a double if the eyes are counted.
That being said, I did see a WW for sale a while back listed as a "double", and it counted the eyes (I think the base and eyes were the same). So, I guess they count?

yes that's a double, the eyes count.
source: me and i've never seen anyone say otherwise
I think it depends on the person. Some count them and others do not consider the eyes to be a "true" double.
I don't count eyes since you can individually besprinkle them.
