Basically a high burn chance means your skill level of cooking isn't high enough to cook the item you're trying to cook without possibly burning it.
At certain levels the high burn chance will go away for some items. I'm not fully sure what everythings level is that stops it but this forum has some info that should help: https://www.lorwolf.com/Forum/View?id=2904
Some foods and recipes have a much higher burn chance until you increase your cooking level. Once you're higher level, this will decrease, but there will always be some chance of burning any food. It's up to you if you want to tolerate a high chance of failure, or save it until you are higher level.
