what are trinkets for? I'm guessing you can't use them to craft otherwise they would be under materials.

Some are used in hunts!
Exactly; some of the hunts have a requirement to turn in specific items and bring a certain amount of food points with you. There may yet be other undiscovered uses for trinkets as well as things that have slipped my mind, but hunts is the big one.
